Richard Lerman is great! I did a workshop with him in 2001 on piezos and building your own mic preamps. There's a lot of good notes in the PDFs on his site.

He did a cool performance where he had the piezos suspended in between two wires which he heated with a blowtorch. Cool listening to the expansion and contraction.

meant to post this ages ago when I made this with Darren Hayman - used the string thing through a Doepfer Dark Energy. Sampled that a bit et voila!

just ebay search 'piezo disc' - mine were cheap and worked fine... not sure if you're allowed to post links on MW - there's 5 down there about 8 rows on the search I just did which would do you fine...

and since it is passive, i thought about putting an fsr on it on order to have amplitude flexibility. it would be easy enough to situate the fsr in order to be able to hold it down just be holding the device or putting a weight on it or something.

Interesting. Could you elaborate on how you connected it to the Dark Energy - ext. audio in, cv inputs, or both?
Nice song, btw.

They shouldn't hum or require massive gain - what is the pressure pad doing? Also, ensure you have the metal disc to ground and the ceramic disc to signal - the Maplin (Radioshack equivalent in UK) piezo mics confusingly have red (usually +ve colour) connected to the metal and black to the ceramic. (well, we always knew they were f-tards..)
