I agree that the MAX11300 dev board is the way to go here. Only question is how many ADC channels can I get simultaneously with enough speed to accurately sample fast envelopes or LFOs. I had not heard about the MAX11300 before, it sounds ideal for what I want to do.
I do wander about what kind of sample rate you can get with 20 inputs over SPI. The spec says 400khz but I don't think you could get that high.

Any projector with at least 30k galvos and analog 0-5v control of the RGB (not TTL) will work fine.
I have a Lightspace Venus II 3w RGB projector and it works great with the Cyclops.
