Goddamnit. I’m writing a game that requires me to make a bunch of .mod/.it files for the music. The idea of using a standalone little box to make them became too enticing. Pre-ordered: apparently due in about 3 weeks.

So, to answer my own question, the answer seems to be the now-freeware 'Firebird 2' from tone2. Very simple, some weird synthesis beyond pure subtractive, and a lot of variety with very few controls.
