I have never sorted JFETs for Idss on any of the 208/258/25S I have either built or repaired. I simply tweak resistor values. If your sine purity trimmer does not result in an acceptable sine wave then yes, you need a J201 or 2N4339 selected for the desired Idss range. Stereo vactrol-based volume controls require devices matched for curve. Offset matching is for use in filters (291) and in the 208 ring modulator.

If the TTMC 158 doesn't say it's specifically 1.2V/Octave on the CV inputs then it's the original 100 Series oscillator scaling which is something like 4V to rise 3 octaves. Looks like TTMC used the vintage implementation of the front panel switch toggling between the front panel frequency pot and the external CV in jacks; only one at a time are used. Some people mix the distortion's output with the dry signal, balance and EQ them as needed, to get the results they want.

The M1 is entirely sample-based and the D50 contains numerous samples of the attacks of acoustic instruments (some looped) to layer upon the traditional waveform synthesis section.

It sounded like they took the audio of the bits after clear speech and just used the ambience of the "uh" "ah" "oh" and transitional bits between easily-recognizable vowels, fricatives, and plosives. Like taking all the sound a guitar makes after the pick hits.
