Addressing question 2, we haven't really touched on the idea of sample and hold as patch memory. One of my favourite techniques is to use multiple S&Hs to modulate various parameters in a patch, usually triggered by a division of the voice's own clock, so there are periodic abrupt changes of timbre....

If you patch your S&H through a quantizer it will stay on pitch for a long time. People that use keyboards to play their modulars have used gate delays to ~delay~ the onset of various modulations.
