If I had the money and had to spend it on Euro modules, an OD ER-301 would be high on the list.
Outside of Euro, I'd buy a small Buchla 200e system, specifically for the 259e.

I sometimes wonder if I am the only person who uses 5U who manages to get into the same amount of spaghetti patching mess with knobs obstructed as I do with smaller format modulars!

I'm not sure. Euro is a juggernaut which keeps on rolling. 5U and 4U for that matter, will always be smaller subsets of the modular ecosystem. Modular signals can be quite hot, but not 20V!
Go through an external mixer and use that to attenuate the modular signal before the Octatrack. Then just set your Octatrack input level as desired for no clipping etc.
