Is it correct to say that the MAX circuit is +ve voltages only (like MATHS). ie 3 -ve voltages to the inputs would give 0v MAX out? And the opposite for MIN

Maybe don't bother with buffered mult to begin with. If you find that you have voltage drop problems when sending a cv to multiple destinations then get one.

S&H is a good way of introducing a bit of random into your patches.
