Which oscillators do you recommend? I’m currently thinking about Mutable instruments Plaits or 4MS Ensemble oscillator

Listen to some demos and get the one you like most. Depends what else you have too - Plaits can work okay as a stand-alone voice with its built-in envelope and VCA.

I love my Klavis Twin Waves mk2. Dual oscillator, cross fm modulation, lfo, vca, loads of different waveforms. In 8HP.

Asking this question in Eurorack is kind of like asking how long is a piece of string.
It's far too open.
However, reading between the lines, if you're a beginner and you want some good options for basic oscs. You could try:
Mutable Instruments Plaits
Intellijel Dixie II
Make Noise STO
Of the 3, I'd probably say Plaits is best to pick up first if you're starting out.
You don't need an external envelope and VCA, as it has internal ones built-in,
plus it's got a far wider range of sounds than either of the other 2 analogue oscs I mentioned.
Plaits was my first, and still gets used all the time.
It's far too open.

I don't like Plaits all that much because it is a Braids wannabe.

I’ve been pleasantly surprised by my Pico Voice. Smaller and cheaper than Plaits but still interesting enough and plenty of flavours. Plaits’ percussion modes are quite useful though.
4MS Ensemble looks interesting too. I got a Chainsaw, not quite the same thing, but also smaller and needs more external control, that can also makes things more fun.
WMD Spectrum looks like a nice bread and butter analog oscillator. I’d probably try to get one if I was starting again.

An interesting and useful VCO which I think doesn't get enough love is the Doepfer A-110-6 Trapezoid Thru Zero Quadrature VCO: https://www.modulargrid.net/e/doepfer-a-110-6
While it doesn't seem terribly special, it offers the normal waveforms, it offers a few unique features that make it an awesome primary oscillator: quadrature outputs and through-zero FM.
